TOTORO SOBA

I've loved Totoro ever since I was a little girl. I remember watching it repeatedly growing up and was completely in awe of how adorable Totoro was. Who wouldn't love such a gentle furry, grey giant? I decided to bring my favourite childhood character to life this weekend in the form of cold soba noodles with a soba dipping sauce on the side. Sharing my recipe below! ;) 

METHOD

Bring the soba noodles to a boil. Once the noodles have cooked put aside in a bowl of cold water and ice. Dice two sprigs of spring onion and use as a 'bed' for Totoro to rest on. Place the cold soba noodles on the bed of spring onion. Using a knife cut out eyes and a tummy using sandwich cheese. Place on top of the soba noodles and add details of the eyes and stomach using a pair of scissors to cut up seaweed.
